 First I took half a cup of tamarind in a bowl. Now I will give 1 cup of water. I will soak the tamarind in water for half an hour. If I soak it in water beforehand, the ash of tamarind can be separated very well.  Then I will take 2 cups of garlic in another plate.  I will make 2 holes in the garlic cloves with the help of a toothpick.  If you make a hole in this way, the water of tamarind will penetrate well. If you can't make more holes, then the garlic cloves can be broken while making the pickle. In this way, I will make holes in all the wells.

 Now I put a pan in the oven and put 1 cup of mustard oil in it. If you make pickles with mustard oil, the pickles are very beautiful.  When the oil is hot, add 1 cup of panchphoran.  After that I will give bay leaves.  Now I will give eight to ten dried chillies.  And I'll lightly fry them all.  After frying for a while, a very nice smell will spread from them.  Then I will give all the garlic cloves in it.  Now fry the garlic cloves for 1 to 2 minutes.  After frying the garlic for a minute, add half a cup of ginger paste.  

Now I will give one teaspoon amount of turmeric powder.  Then I will give one teaspoon amount of coriander powder.  Then I will give one teaspoon amount of chilli powder.  And one teaspoon of salt.  Now I will mix all of them again. It has been mixed.  Now I will give one teaspoon amount of mustard paste.  I have taken black mustard here. You can take white mustard if you want.  Now I will mix the mustard money well with all of them.  Now I will give one teaspoon amount of white vinegar.  I will cook everything again.  

After cooking for a while, I will add tamarind water.  Giving tamarind water will make you feel sour.  After cooking for a while, the garlic will be cooked.  Now I will add 2 teaspoons of sugar.  If you prefer to eat sweets, you can increase the amount of sugar a little.  However, it is better if the garlic pickle near me is less sweet.  Cook for a while and thicken the pickle.  When the pickle becomes a little thick, I finally add one teaspoon of pachphoran powder in it.  Now I will mix everything.  After the garlic is cooked, I will take it out of the oven and take it in a bowl.  A very interesting garlic pickle was made.
